Chocolate Fudge Protein Brownie

Brownies are tricky. Too much flour and you've got a cake, too much sugar and you've got a stomachache. But this recipe has it all. Gooey, crunchy, chocolatey, with just a dash of salt. ANNNND, IT'S HEALTHY😇. Here's a list of the ingredients and why they're so good for you!

Almonds: Good fats (heart healthy monounsaturated), protein, good source of vitamin E, manganese, biotin, copper, magnesium, molybdenum, riboflavin (vitamin B2), and phosphorus.

Coconut nectar: Very low glycemic (~5) and contains 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins, and nearly neutral pH. 

Protein powder: Low calorie way to get your daily protein intake, especially if you do heavy workouts. 

Coconut oil: Medium Chain Triglycerides (MCTs)-aid in weight loss and has additional health benefits. Contains lauric acid, which is converted to monolaurin when ingested. Both auric acid and monolaurin kill harmful pathogens (bacteria, viruses, and fungi), potentially preventing infections.  

Raw cacao powder: Top source of antioxidants, and it contains magnesium and iron.

My sisters and I came up with this recipe based on one of our favorite detox recipes. If you want to forgo the flour but still want a crunchy brownie, try this one. It’s pretty calorie dense, but worth it as a cleaner, sugar free dessert. (We’ve found cutting calories doesn’t necessarily equal skinny or weight loss. You have to be satisfied and have healthy habits.)

Today, we had the two cutest helpers which made this dessert even sweeter. 

Recipe: 

1/3 cup almond flour

1 cup almond butter

3 scoops raw protein powder (chocolate, vanilla, or unsweetened)

1 cup coconut nectar

1/2 cup coconut oil (may add up to 1/4 cup additional oil if batter is dry)

3/4 cup raw cacao powder (you bake the brownie, so raw is unnecessary)

2 tablespoons vanilla

1/2 teaspoon sea salt

1 teaspoon baking soda

 

 

Directions:

Preheat oven to 325.

In large bowl, add almond flour, almond butter, protein powder, coconut nectar, coconut oil cacao powder, vanilla, sea salt, and baking soda, in this order and mix until consistent. 

Check the batter, and if it’s too oily, you can add in 1/4 cup almond meal or a tbsp or two of cacao powder, but this may change how chocolatey the brownie is. Also, almond butters can vary which may change the consistency. 

After all ingredients are added, the batter should resemble that of a tootsie roll and easily come out of the bowl.
